I can’t remember how it came to be that we ate this super salad one night, but we did and it was fantastic! We found ourselves at the grocery store (Thrifty’s to be exact) and purchased a piece of rotisserie cooked chicken breast and a couple of other salad items. The salad contained Saanich organic salad mix, tomatoes, red onions, cucumbers, radishes, feta and cheddar cheese, avocados, bacon, and chicken breast. And the dressing was a vinaigrette made of white wine vinegar, mustard and olive oil. There were suppose to be croutons too, but unfortunately they caught on fire when the parchment paper curled up into the top broiler. Thankfully the smoke alarm didn’t go off, but too bad those little brats ended up getting soaked and ultimately ditched in the kitchen sink.
